Well I though a goat cheese pizza would be a fun thing to make! Sure it was. After my successful olive bread recipe where I used fresh yeast for the first time I challenged myself to make pizza dough from scratch.

Ingredients for 4 persons
1 Granny Smith apple
3,5 oz (100 g) goat cheese
⅖ cup (100 ml) warm water
5,8 oz (165 g) plain flour
0,3 oz (8 g) fresh yeast (or 1 tsp dry yeast)
a handful fresh oregano
olive oil
1/2 tsp salt
Add the flour and salt to a blender.

In a small saucepan combine the warm water and yeast.

Stir until the yeast has dissolved.

Add the yeast liquid to the flour in the blender.

Pulse well until you get a smooth dough.

Sprinkle a clean surface with flour and put the dough on it. Sprinkle with more flour and start to knead the dough for 5 to 8 minutes until it doesn’t stick anymore. Add extra flour if necessary. Form the dough into a nice ball.

Lightly dust a salad bowl with a little flour and add the dough ball. Cover the bowl with a kitchen towel and put it aside at room temperature for 2 hours.

The dough has to raise until double its original volume.

In the meantime slice the apple finely. Lightly crumble the goat cheese using your hands. Put the dough on a floured surface and roll it out thinly. Transfer it onto a pizza stone or metal bread plate.

Sprinkle with the sliced apple.

Top with the crumbled goat cheese and fresh oregano. Season with pepper and salt.

Bake the pizza in a preheated oven 235°C for 20 to 25 minutes until the center is cooked and the sides are crisp. Remove the pizza from the oven. Sprinkle with some olive oil.

Slice the apple and goat cheese pizza and serve.
